Leek & Potato Soup
Preparation:
- Slice the leeks, then chop them up
- Slice the onion, then roughly chop it up
- Chop up the potatoes
- Add all to pan with boiling water & at least 1 vegetable stock-cube, & perhaps a spoonful of mixed herbs!
- Simmer until everything is soft
- Season as required, then serve as soon as possible!
By the way, I tend to use stock-pots rather than cubes, & lots of 'em!
