NB: There's a very simple alternative to chopping all the veg, simply buy a big pack of fresh vegetable mix in any supermarket
1 medium leeks
1 larger onion
As many mushrooms as you can spare
A handful of frozen sweetcorn
A handful of frozen peas
At least 2 stock-cubes or pots, one of which-ever meat you are using, & a vegetable one
A teaspoon of mixed herbs & cruet (salt & pepper)
Preparation:
Chop up the meat & the onions
Chop up all the vegetables
Put the onions in your oiled saucepan & heat until softened, & turning brown
Add the meat & the meat stock-cube(s), then put the lid back on the pan
Simmer for several minutes, to partially cook the meat
Add the vegetables, the vegetable stock-cube(s), then season. Also add a teaspoon of mixed herbs
Leave to simmer for as long as is needed, until the meat is cooked through. Always check that everything is cooked, or risk your health!
Season as required, then serve as soon as possible!
By the way, I use a large wok instead of a saucepan, then I keep it for most of the week in the fridge, where I can fill my plate to reheat it in the microwave, every night!
